LOUISVILLE, KY. — Light shimmers against the brick walls of the Woodford Reserve distilling room, as waves of heat emanate from 15-foot-high copper pot stills.
Sweat trickles down a bald skull to a white shirt collar. From the pocket of my wool suit, I remove the monogrammed handkerchief my mother gave me, never before used, and mop the back of my neck.
Frank Coleman of the Distilled Spirit Council of the United States, the lobbying group that’s brought a gaggle of international journalists for a tour of what they bill as the Whiskey Trail, suggests I remove my jacket. But that would break a promise I made to myself; while seeing the American south, learning how bourbon is made and finding something good to eat, I would not let these folks see a Canadian boy sweat by taking off my jacket.
Before dipping into the valley that houses Woodford, several miles of road are all hills and horses. The food, by executive chef Ouida Michel, is thoughtful and well-executed: open-faced sandwiches of medium-rare angus ribeye; scoops of gooey chocolate bread pudding drowned in caramel; all of it reservedly tinged with the company’s red liquor.

The rules for bourbon production — American made, minimum 51 per cent corn in the grain mix, fermented to 160 proof, casked at 125 proof, matured in an unused charred oak barrels — result in a drink that does not vary as radically as Scotch does. The exception is Maker’s Mark, which digresses from the corn, rye and barley mix to incorporate the flavour of red winter wheat. Their tour also smartly conducts the tasting inside the aging house, so guests can breath in the boozy climate, hand on a perspiring barrel, while sipping bourbon.
In the fermenting room at Woodford, master distiller Chris Morris encourages us to lean deep over 7,500-gallon vats of grain mash, to breath in the smothering fumes, bubbling not from heat but fermentation. The better tours, such as Woodford and Maker’s, have us taste the spirit in its distilled, pre-cask phase, so we can appreciate all that is imparted from the barrel aging.
